Hello, there it’s time for a Friday Front Porch Coffee Chat! It’s Good Friday and Easter week! Once again, we have officially come to the end of another abnormal work week which is our new normal. And it is the time for making Easter Plans.
As for me, it’s sort of a crazy thing how this abnormal thing that is known as social distancing is starting to take on a strangely normal feel. A feeling that I must say I do not like! Gratefully, we are adaptable and move forward in our daily lives. As we are doing everything that we can to make the most of this unique shared experience called Coronavirus.

Let’s Talk Gratitude and Easter Plans

First, I would like to take the opportunity to express how very appreciative and thankful I am to all the people in our world who are working diligently at their jobs to care for us and keep us safe in this time of need. Their names and numbers are too enormous for me to acknowledge here. But we all know how important their work is to us. And who they are the health care workers, service workers, officials, grocery workers, our suppliers, the list goes on and on.
Easter Menu
Well, for us at our home, Easter plans 2020 is going to simple but delicious. My husband loves a good baked ham. And so, I am planning a menu consisting of roasted ham, baked potatoes, vegetables, deviled eggs. And our dessert will be an apple pie.
Below is the recipe from Boar’s Head – Holiday Recipes that I use when baking our holiday ham. It’s easy and delicious.
Easter Ham With Brown Sugar & Spice Glaze
INGREDIENTS
5 lbs Boneless Smoked Uncured Ham
1 jar Brown Sugar & Spice Ham Glaze
1/2 cup Water
INSTRUCTIONS
Preheat oven to 325 degrees F
Remove ham from packaging and lightly score in a diamond pattern with a sharp knife.
Place in a shallow roasting pan. Pat a thin layer of glaze on the entire surface of ham. Reserve a small amount of basting. Add water to the pan.
Tent ham with aluminum foil, sealing edges tightly to the pan.
Bake 15 minutes per pound. Remove ham 15 minutes before it finishes baking and apply additional glaze, if desired.
Raise oven temperature to 425 degrees F and bake uncovered for the remaining 15 minutes.
Have you ever wondered, why we eat ham at Easter?
Simply put, we eat ham on Easter because it’s in season. In the past the farmers would cure their meat during winter months as a way of preserving it. With the arrival of springtime it is ready to eat. And Easter is the first holiday in the spring. Practically rules the day again!
Speaking of spring and Easter, do you know why the date for Easter changes?
Well, I checked the Farmer’s Almanac to learn about the holiday and to answer to our questions.
And it states that Easter is set for the first Sunday following the first full moon of Spring, occurring on or shortly after the Spring Equinox. March 22 is the earliest Easter can occur on any given year, and April 25 is the latest. If that first spring full moon occurs on a Sunday, then Easter will be observed on the following Sunday. You can see how our Easter plans frequently change because of the date changes.
Cake Pops & Birthdays
Last week was a week of Birthdays. My son, my grandson, plus five family members and friends, plus children of friends all celebrated birthdays on April 5th and 6th.
Now, my grandson celebrated his BIG#10 and he has been looking forward to a big boy swim party – a sleepover with friends. Of course, that has been put on hold until we are back to normal activities.
So, Mom to the rescue, not only has she been spending her days homeschooling the boys, they spent the day creating these beautiful and fun cake pops! Homeschooling, social media, and social distancing are certainly bringing out the creative spark many of us.

Your Easter menu sounds delicious. I’m a fan of Boars Head meats too. I’m sure it’s difficult for your 10 year old grandson to wait on his birthday but unfortunately it’s a different world right now.
