Memorial Day Weekend 2020 the start of summer

Memorial Day weekend is coming as a surprise to many this year. Why? Because this year,  Memorial Day weekend is May 23rd through May 25th. Now, it is one of those holidays whose date changes every year. But it is always held on the last Monday in May. Thus, the 25th of May is an early celebration. And there is more to the surprise arrival. All spring, we have been emerged in fighting this strange new virus called COVID19. The idea that the weekend which we have come to think of as the kickoff of summer has arrived seems like so soon!

Having spent over two months in quarantine here in the United States, we are now starting to move about more freely. With this experience comes the recognization of how precious our freedom is to us. And the thankfulness to those who have given their all to fight and preserve it for us.

The purpose of our celebrations is to remember those who have fought and given their lives for our protection and freedoms. This year we celebrate not only the military heroes, but let’s include all the front line workers. They have given their all for our health and safety fighting a new kind of unseen enemy that is attacking worldwide.

Kickoff of Summer

These days, the Memorial Day weekend has become the unofficial summer kickoff for start to the summer season. The school year is officially closing down (homeschooling is now over,) and it’s a national three day weekend. This year our celebrations will be smaller (groups of 10 people). But, let’s take a breather and celebrate with hope and positivity. Maybe a backyard barbecue is on your calendar as more states are in the process of opening up.

How about Banana Pudding for dessert?

Banana Pudding - Memorial Day Weekend 2020
A Southern Dessert Delight – Banana Pudding

This salty, sweet, dessert is a no-bake delight that everyone will love! It is a delicious and welcome addition to the menu at any party or special events!

PREP TIME: 25 mins

TOTAL TIME: 4 hours 25 mins

INGREDIENTS:

1/3 c. all-purpose flour, spooned and leveled

1/4 tsp. fine salt

2/3 c. + 3 tbsp. sugar

1 3/4 c. whole milk

4 lg. egg yolks

1 3/4 c. heavy cream divided

1/3 c. Creamy Peanut Butter

3 tsp. pure vanilla extract, divided

50 vanilla wafers

4 med. ripe bananas, sliced

3/4 c. chopped roasted and salted peanuts, divided

DIRECTIONS

  • Whisk together flour, salt, and 2/3 cup sugar in a medium saucepan. Whisk in milk, egg yolks, and 1/2 cup cream. Cook over medium heat, whisking constantly until thickened and a pudding-like consistency, 7 to 9 minutes. Remove from heat and whisk in peanut butter and 2 teaspoons vanilla.
  • Arrange 25 wafers (slightly overlapping) in the bottom of an 8-by-8-inch baking pan. Top with half of the banana slices, 1/4 cup peanuts. Cover and chill 4 hours or up to overnight.
  • Whisk remaining 3 tablespoons sugar, 1 1/4 cups cream, and 1 teaspoon vanilla on medium-high with an electric mixer just until stiff peaks form, 2 to 3 minutes. Spread over top. Sprinkle with remaining 1/4 cup peanuts.

  3. Rosemary – I am so ready to kick off the summer. We usually take a trip to see our sons this weekend so I am a bit sad. Until I saw your post.

  4. I don’t see in this recipe when you add the pudding to the pan? I assume after the 1/2 cup of peanuts and before you put in the fridge to chill for 4 hours – is that correct?

    • You are correct, Karen. This is a layering dessert. The pudding is added after the peanuts. If you are making the pudding in a deep dish, you repeat the layers.
