It’s here this weekend is Super Bowl Sunday! Now that the LA Rams and Cincinnati Bengals are facing off in the Super Bowl LVI on Sunday, it’s time for us to start planning what delicious snacks we will be enjoying! I am sharing with you my family’s favorite Mississippi Caviar Bean Dip for Super Bowl Sunday. It’s easy to make ahead. Plus, the longer it sits the better it gets!
Mississippi Caviar
My family loves this bean dip as an appetizer which is always a huge hit! Plus, it is a healthy snack and requires no cooking!
Originally the recipe is from Nathalie Dupreee’s Southern Memories – Recipes and Reminiscenes.
Many of you may know different variations known as Cowboy Caviar.
No matter the name Mississippi Caviar is a fast, easy and versatile bean salsa recipe perfect for parties! And your friends and family will ask for it over and over again.
Mississippi Caviar
3 (16 ounce) cans black eyed peas (beans) drained
1/2 cup finely chopped green pepper
1/2 cup finely chopped red pepper
3/4 cup finely chopped
hot peppers
3/4 cup finely chopped onion
1/4 cup drained, chopped pimento
1 garlic cloves, chopped
1/3 cup red wine vinegar
2/3 cup olive oil
1 tablespoon
Dijon mustard
Salt
Hot sauce
Pita or Tortilla chips
In a large mixing bowl, combine peas, bell peppers, hot peppers, onion, pimento and garlic.
In a separate bowl, whisk together the vinegar, oil and mustard and pour over the beans mixture; mix well.
Season to taste with salt and hot sauce.
With a wooden spoon or potato masher, mash the bean mixture slightly.
Refrigerate until ready to serve.
Drain the “Mississippi Caviar” well and serve with pita or tortilla chips.
It’s A Pizza Party On Super Bowl Sunday
Of course, along with the yummy apietizers and bean dip, we will be eating pizza! I believe in the concept of keeping it simple and enjoying the game and commercials! By ordering in our favorite pizzas I can make sure that Super Bowl watching is simple and easy for the cook.
Desserts
Lastly, for dessert, again let’s keep it simple and just serving cookies or cupcakes! Either homemade or from your local bakery, you will find such creative and delicious items at the grocery.
